Homemade Pancake Mix

Just about every single Sunday morning my husband + I partake in the “most important meal of the day“…This is the Stanley take on Breakfast!

About 6 months ago I got on this kick of “I can make that from scratch” and now I make my own taco seasoning, ranch dressing mix and even pancake mix! If homemade pancake mix something you’ve thought about trying I’d be happy to share my recipe with you! (Best part about this mix is it doubles as a waffle mix!)

Pancake/Waffle Mix

Ingredients:

  • 5 cups Flour
  • 1/4 cup Baking Powder
  • 2 tsp Sugar
  • 1 tsp Salt
  • 1 cup Cold Butter (I like to use stick butter. Makes life so much easier!)

Directions:

  • Using a stand mixer, blend ingredients until they are a powder (Don’t worry if your mix still has small butter chunks. Butter will melt as you use the mix later.)
  • Store in an air-tight container in the refrigerator
  • Good for up to 6 weeks

How to Make Pancakes

Ingredients:

  • 2 cups Pre-Made Mix
  • 1 cup Milk
  • 2 Eggs

Directions:

  • Preheat whatever you plan on cooking with (i.e. griddle or skillet) and spray with non-stick cooking spray
  • Mix together all ingredients until well combined
  • Cook on griddle or skillet until golden brown and cooked through in the middle, flipping halfway through the process to insure both sides are evenly cooked (My griddle temp is set at about 325 degrees Fahrenheit. Set skillet temp at about medium-hight heat depending on your stove.)

*Makes about 5-6 Pancakes

How to Make Waffles (not pictured)

Ingredients:

  • 2 cups Pre-Made Mix
  • 1 1/3 cups Milk
  • 2 Tbsp Melted Butter
  • 1 Egg Yolk
  • 1 Egg White

Directions:

  • Preheat your waffle marker (I set mine to about medium heat) and spray with non-stick cooking spray
  • Mix together mix, milk, butter and yolk until well combined
  • In a separate bowl, whip egg white until fluffy and fold into other mixture
  • Using a large cookie scoop, pour 1 1/2 scoops (you may have to adjust depending on the type of waffle maker) onto waffle marker, close lid and wait for the BEEP!
  • Remove golden brown waffle from waffle marker and repeat

*Makes about 3-4 Waffles

Notes:

  • This mix can easily be halved or doubled depending on the amount of people partaking in this homemake breakfast deliciousness!
  • You can also add in spices, fruits or chocolate chips to your pancake or waffle mix for a little extra POW! Here’s some of our favorites (be sure to halve or double your add-ins as you halve or double your mix):
    • 2 tsp Pumpkin Spice + 1/2 cup White Chocolate Chips
    • 2 tsp Cinnamon + 3 Tbsp Brown Sugar + 1/2 cup Semi-Sweet Chocolate Chips (pictured)
