Reese’s Peanut Butter No Bake Cheesecake

This year for Valentine’s Day I made this equally beautiful + delicious Reese’s No Bake Peanut Butter Cheesecake. It’s great for a special event but an easy dessert for an end to any meal. Here’s the recipe

Crust:

  • 24 Oreo Cookies
  • 5 Tbsp Butter, Melted

Cheesecake Filling:

  • 24oz Cream Cheese, Softened
  • 8oz Whipped Topping (like Cool Whip)
  • 1 tsp Vanilla
  • 1 cup Powered Sugar
  • 1 1/2 cup Peanut Butter (I used creamy but crunchy will work as well)
  • 30 Reese’s Miniatures Cut in Quarters (15 for filling, 15 for topping)

Directions:

  • Put Reese’s cups in freezer for 30mins to harden
  • Crush Oreo cookies in a food processor (I used a blender) and add melted butter. Mix a little more to incorporate
  • Cut a piece of parchment paper and place in the bottom of a springform pan (this way it won’t stick to the bottom and makes for easy removal and easier clean up. You’re welcome;)). Press mixture into bottom and partway up the sides of the pan
  • Refrigerate crust for at least 30mins to firm
  • In a separate bowl, beat together cream cheese, powdered sugar, vanilla, and peanut butter until well mixed (You can mix with hand mixer or stand mixer)
  • Fold in whipped topping with spatula or spoon until uniformly blended. DO NOT MIX or you will break the whipped topping and lose the fluffiness and that would be sad 😦
  • Fold in half of the frozen, quartered Reese’s
  • Pour/spread into pan and refrigerate for at least 4hrs or until firm
  • Remove from springform pan and top with remaining frozen, quarter Reese’s. I made mine in the shape of a heart of Valentine’s Day (obviously) but you can make any shape or just have them scattered randomly
  • You can also drizzle with chocolate syrup if desired
